‘Ch’arki’ is the the name derived from the Quechuan language of the Peruvian Incan Empire used to describe the process of preserving meat. Today, our lambs are raised under the watchful eye of Peruvian herders along with their dogs that live and work on our ranches in the United States. As it was some eight hundred years ago in the Andes Mountains of Peru, the rich history of the Incan Empire continues to exist in the modern day method of raising and producing our authentic gourmet Ch’arki.
